THE GAVEL is a Madeira-style, fortified white dessert wine aged using the solera method. Volume II, of which only 382 bottles were made, marks the second edition to be bottled since beginning our solera process in 2014.

THE GAVEL is bottled as “volumes” as opposed to “vintages,” because the blend contains wine from multiple harvests. All of it has been aged a minimum of four years, with an average age of five-plus years. As the process continues, a small amount of the original batch of wine from 2014 will always remain in the system, but the minimum and average age of the wine will remain relatively constant, as well as the style, due to the fractional nature of the blending and aging process.

THE GAVEL is ready to drink upon release, but has a lifetime of aging potential – the oxidative style, bit of sweetness, and balance of acidity makes it bulletproof in the cellar for decades.
